Immune Boosting Cold Garlic Soup Recipe Perfect for Summer

Garlic is one of the most powerful foods available to us, and not just for warding off vampires! Garlic has been used for centuries to boost the immune system, ward off colds, lower high blood pressure, and even detoxify the body.

As we ease out of summer and transition into fall, it is important to keep the immune system healthy—and besides becoming a Solar Body, one of the best ways to do that is through diet. Mother nature provides all we need to maintain homeostasis and amplify our innate self-healing power. Garlic is one of the most potent natural ways to boost the immune system and ensure that the body is operating at its highest level.

Garlic is easy to include in your diet and makes just about everything taste better! This delicious cold garlic soup recipe will help you keep your health in tip top shape as well as give you the comfort of a soup but with a refreshing and crisp taste for the last days of summer.

Immune Boosting Cold Garlic Soup Recipe Perfect for Summer

Make this refreshing soup on a hot summer day to prepare for colder weather and keep your health vibrant.


  • 4 ounces (1/2 cup) blanched, peeled almonds or slivered almonds
  • 3-4 slices stale baguette
  • 3 cloves garlic
  • 4 cups (32 ounces) water
  • 5 tablespoons extra virgin olive oil
  • 3-4 tablespoons sherry vinegar
  • 16-20 seedless green grapes (optional)
  • Pinch of salt to taste

  1. Peel garlic. Trim crust from bread slices if using French-style or rustic bread. Place bread in 1-2 cups of cold water to soak
  2. While bread is soaking, place garlic and almonds into a food processor or blender. Blend on pulse until smooth
  3. Remove bread from water with a slotted spatula and squeeze out excess water
  4. Tear bread into quarters. Add bread and 1 teaspoon salt to processor or blender. Blend on the pulse setting
  5. While blending, slowly drizzle olive oil, then vinegar, and then finally add the water into blender or processor. Taste. Adjust salt, vinegar, and oil to taste
  6. Strain through a sieve into a container or bowl. Press as much as possible through the sieve
  7. Seal and chill at least 2-3 hours or overnight
  8. Serve in chilled bowls or glass mugs, with grapes on the side


Note: To rapidly chill the soup, place the bowl or container of white garlic soup in a larger bowl with ice water for 5-10 minutes.

Although this soup is meant to be eaten cold, garlic is actually a warming food that helps raise the temperature of your body from the inside out, effectively engaging the Water Up, Fire Down energetic exchange. Ideally, you want the heat in your body to be in the abdomen, not the upper parts of the body like the chest or head. When the heat is localized in the abdomen, you can think more clearly and better manage emotions. This is also useful in the summer as heat rises to the head and you can easily overheat.
